Summer Berry and Spinach Salad

Nothing beats the summer heat than a fresh salad! A perfect summer salad is light, refreshing, and packed with seasonal flavors. Here's a recipe for a delicious and colorful summer salad.

Ingredients
  

  • 6 Cups Fresh Baby Spinach
  • 1 Cup Fresh Strawberries, Hulled and Sliced
  • 1 Cup Fresh Blueberries
  • 1 Cup Fresh Raspberries
  • ½ Cup Crumbled Feta Cheese
  • ¼ Cup Red Onion, Thinly Sliced
  • ¼ Cup Toasted Pecans or Walnuts
  • 1 Avocado, diced

For the Dressing:

  • ¼ Cup Balsamic Vinegar
  • 2 Tablespoon Olive Oil
  • 1 Tablespoon Honey or Maple Syrup
  • 1 Teaspoon Dijon Mustard
  • Salt (To Taste)
  • Pepper (To Taste)

Instructions
 

Prepare the Ingredients:

  • Rinse and dry the baby spinach.
  • Hull and slice the strawberries.
  • Thinly slice the red onion.
  • Toast the pecans or walnuts in a dry skillet over medium heat until fragrant, about 3-4 minutes.

Make the Dressing:

  • In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.

Assemble the Salad:

  • In a large salad bowl, combine the baby spinach, strawberries, blueberries, raspberries, red onion, and avocado.
  • Sprinkle the crumbled feta cheese and toasted pecans or walnuts over the top.
