Summer Berry and Spinach Salad
Nothing beats the summer heat than a fresh salad! A perfect summer salad is light, refreshing, and packed with seasonal flavors. Here's a recipe for a delicious and colorful summer salad.
Ingredients
- 6 Cups Fresh Baby Spinach
- 1 Cup Fresh Strawberries, Hulled and Sliced
- 1 Cup Fresh Blueberries
- 1 Cup Fresh Raspberries
- ½ Cup Crumbled Feta Cheese
- ¼ Cup Red Onion, Thinly Sliced
- ¼ Cup Toasted Pecans or Walnuts
- 1 Avocado, diced
For the Dressing:
- ¼ Cup Balsamic Vinegar
- 2 Tablespoon Olive Oil
- 1 Tablespoon Honey or Maple Syrup
- 1 Teaspoon Dijon Mustard
- Salt (To Taste)
- Pepper (To Taste)
Instructions
Prepare the Ingredients:
- Rinse and dry the baby spinach.
- Hull and slice the strawberries.
- Thinly slice the red onion.
- Toast the pecans or walnuts in a dry skillet over medium heat until fragrant, about 3-4 minutes.
Make the Dressing:
- In a small bowl or jar, whisk together the balsamic vinegar, olive oil, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
Assemble the Salad:
- In a large salad bowl, combine the baby spinach, strawberries, blueberries, raspberries, red onion, and avocado.
- Sprinkle the crumbled feta cheese and toasted pecans or walnuts over the top.
